2 cups Baby Spinach, arrange on chilled plate

5-7 Mandarin Orange, segments

2 TBS Crumbled Blue Cheese or Feta Cheese

Thinly sliced red onion

2 TBS Bodacious Olive Dark Chocolate Balsamic Vinegar 

3 TBS Bodacious Olive Blood Orange Olive Oil 

To make the vinaigrette: whisk the Blood Orange Olive Oil into the Dark Chocolate Balsamic Vinegar in a small bowl.  Drizzle over salad and enjoy!
