• 1 cup Bodacious Blueberry Balsamic Vinegar • 3 tablespoons honey
• 1 teaspoon vanilla extract
• 1/2 teaspoon cinnamon

• 1-1/4 cups flour
• 1/2 teaspoon salt
• 1 tablespoon baking powder
• 1 tablespoon honey
• 1 egg
• 1 cup milk
• 2 cups blueberries, fresh or frozen

• Bodacious Butter Infused Olive Oil

Syrup: In a sauce pan, whisk together the first 4 ingredients and heat on low stirring frequently. Reduce by 50% (about 10 minutes) and remove from heat. Syrup will thicken considerably as it cools. Pancakes: In a large bowl, whisk together flour, salt, baking powder, honey, egg and milk. Fold in blueberries. Heat a griddle pan on medium and coat with Bodacious Butter Infused Olive Oil. Poor or ladle batter onto griddle leaving space between. (Use less batter for minis, more for regular-sized pancakes). Brown on both sides, drizzle with Bodacious Blueberry Balsamic syrup and serve hot.
