4 Chicken Breasts, (boneless & Skinless)

2 to 3 TBS Garlic Extra Virgin Olive Oil, as needed*

4 TBS of  Butter

2-3 med Onions, Sliced length wise

½ tsp Fresh thyme

1 cup Mushrooms

1/3 cup Raspberry Balsamic*

Salt and pepper

Season breast with a mixture of  ¼ tsp thyme, salt and pepper. Heat skillet over med heat.

Add 1 TBS of Garlic Olive Oil and 1 TBS butter, Sautee onions until soft or caramelized

(Sautée mushrooms as desired). You may need to turn the heat down so the onions do not brown too quickly.

Add balsamic and ¼ tsp of thyme, salt and pepper. Raise heat and reduce until slightly thickened.

Sautée Chicken Breasts- in equal amounts of 1 TBS Garlic Olive Oil and 2 TBS of butter,

brown for about 4 to 5 min per side. Or until internal temp reads 165 degrees.

Divide onions on plate, slice breast and fan over onions.

Garnish: minced parsley
