5 oz. quality bittersweet chocolate

1/3 cup + 1 TBS Bodacious Olive Blood Orange Olive Oil

½ cup sugar

3 large eggs

½ tsp vanilla extract

½ cup unsweetened cocoa powder

Pinch of sea salt


Preheat oven to 375. Grease 8 inch round baking pan with 1TBS of Blood Orange olive oil.  Melt finely chopped chocolate with olive oil. Remove from heat and whisk in the sea salt and sugar. Add eggs one at

a time, whisking well after each one. Sift cocoa powder over the chocolate and whisk until just combined. Pour batter into pan and bake for 20-23 minutes, or until top has formed a thin crust.  Cook cake in pan for

5 minutes, then invert on serving plate. Drizzle cake with a small amount of olive oil or dust cake with cocoa powder.  Serve with orange sorbet or whipped cream.
