Cook Time: 15 Minutes – *Speediest with rice cooker
Taco Assimilation Time: 5 Minutes
Total Time until Dinner: 30 Minutes
We used Portobello mushrooms, but if you wanted to use chicken, or black beans – be our guest!
You’ll need: Bodacious Olive Lime Olive Oil & Harissa. (Our staples for Mexican flavor), Rice, Cilantro, Salsa, Chopped Onion & Seasalt. You’ll also need tortillas, cheese and your favorite toppings.
To feed 4:
- Olive Oil – 2-3 tbsp. of each
- Portobello – 2 caps chopped
- Rice – 2 cups
- Cilantro – 4 tsps.
- Salsa- 1/4 cup
- Chopped onion – 1/4 cup
- Seasalt- Pinch
- Tortillas – 2-3 per person
- Favorite toppings – up to you!
In Rice Cooker (Or pan) – combine cooked rice (Your choice, we used traditional white rice) with cilantro, salsa and chopped onion. Let simmer.
In Sautee Pan – grill up your Portobello, black beans or chicken with a tablespoon or Harissa and Lime Olive Oil until it covers the protein, add seasalt to taste.
….Combine the two (rice and protein) when they look just right!
Then, Layer your rice and Protein into a small tortilla shells (soft or hard), top with shredded cheese and your favorite toppings.
